This seasonal restaurant serves dinner only (Thursday to Monday) and has an intimate ambience and elegant décor, with attractive works of art by Nils Burwitz, and appreciated touches such as small stools on which ladies can place their handbags.
Chef Rafael Sánchez and his brigade produce exquisite cuisine for Es Fum’s various tasting menus (no à la carte). The menu descriptions of these gastronomic treats include only the key ingredients, so each dish arrives as a surprise. Stand-out dishes we tried in 2016 included grilled foie with a reduction of goat’s milk and kefir, nisperos compote and crumb of dried nisperos; fillet of Cap Roig fish and fideuá noodles infused with coconut and citronella, with beetroot and baby broad beans, and a ‘tartufo’ of dark and white chocolate with citrus flavours.
Tasting menus are a choice of 6, 8, or 10 plates, Vegetarian, and Junior Gourmet are offered so you don’t have to be a carnivore or adult to enjoy Rafael’s culinary talents!
Slick service from unstuffy, knowledgeable staff, including excellent sommelier. The extraordinary cuisine and excellent choice of wines – including Mallorcan – are priced to reflect Sánchez’ culinary genius.

Chef Rafael Sánchez
Rafael Sánchez was born in Barcalona on 25 January 1974. Following his training as a chef, he acquired professional experience at various restaurants. He joined the kitchen team at the Sheraton Mallorca in 1996 as chef of the former Michelin Star Restaurant Plat d’Or and invented exquisite creations till 2012.
At the beginning of 2014 Rafael Sánchez moved to The St. Regis Mardavall Mallorca Resort, there he is head of the restaurants Es Fum and AQUA.
The principle applied by Rafael Sánchez and his team is to always serve the freshest, best quality products, offering a diverse array of forms and preparation methods. Sánchez lives up to this principle through an artful blend of creativity, innovative skill and extravagance.
In the words of Rafael Sánchez himself, “We prepare foods which are in harmony with the seasons, showing a deep respect for our environment. We take great care to cook each and every product only up to the precise point at which it is done to perfection. Our cuisine is in tune with the times”.
