Collect your own asparagus
Wild, green asparagus is ripe in springtime along road and field sides and Mallorcans love to pick their own vegetables. Look out for fresh, green meadows or recently sown fields. You will have more luck in the centre of the island, around Llucmajor but also in the Southeast and the area surrounding Sa Pobla. The asparagus has long, thin stalks and a slightly bushy head. The stalks should be generously cut before cooking as they can be quite woody and bitter. Asparagus tastes best freshly cut and the best places to find it in abundance are a well kept secret; however, you will also find this delicacy in your local market or in Palma’s market hall. Asparagus is best blanched in a mixture of water and milk, to reduce the bitterness. For a light lunch, once blanched simply stir-fry it in olive oil together with garlic and bacon. Delicious!
