Since the1992 Mexican movie classic Like Water for Chocolate (“Como agua para chocolate“) it’s seemed credible that warm emotions are an important ingredient in cooking and that meals prepared with love can even create magic among diners.
This may explain the memorable occasions enjoyed by guests high above the village of Esporles at La Posada del Marqués restaurant. Swiss-German manager Carina Rupp and German chef Christian Denz are a couple, destiny having brought them to work together under the same roof. One year ago, their little daughter was born. Both are of the same mind when it comes to running a hospitality business. Their underlying principle is “We are a guest restaurant, not a chef restaurant.” Whatever their guests’ desires, they will seek to fulfill them.
A gleam of expectation can be observed when visitors reach La Posada del Marqués, located in the heart of the Tramuntana mountains with views stretching as far as the bay of Palma. At the end of a 4 km snaking narrow road from Esporles you’ll find a breathtaking vista. The 16th century manor house is situated at an altitude of 510 metres and was converted into a luxurious 4-star-hotel in 1993. The original architectural features were preserved. Both terrace and interior effuse an antique-ostentatious, glamorous charm, and guests can feel like royalty in the castle-like halls with chandeliers and fairytale chambers.
However,the atmosphere in the historic room housing Sa Tafona restaurant – an impressive former oil mill – is not stately but relaxed and intimate.

Christian Denz responds to his customers’ requirements when preparing for special celebrations such as wedding parties and corporate events. This discreet, hideaway home is the venue for many weddings and celebrations. During the winter months, professional cyclists and walkers often use the 17-room hotel accommodation, and suitable meals are needed to fuel their exertions. No problem for Denz. There’s no reason for the 33-year- young chef to be humble, though. The man from Heilbronn has a solid repertoire of dishes, gleaned from his widely varied culinary experiences. Among others, he’s worked for the five-star hotels Elephant (Weimar), Fürstenhof (Leipzig) and Plaza (Vienna).
The review team from abcMallorca is delighted to sample his exquisite menu, prepared with the idea that a group of friends or a family can order a roast dinner which can be shared as one would do in their own home. The meal begins with finely sliced octopus carpaccio with cilantro vinaigrette and herbs from the campo surrounding Es Verger valley, handpicked by the chef himself. This is followed by a turbot fillet, covered with a carpet of braised mushrooms. The main course is a complete golden roast duck served with meticulously arranged vegetables to create a delicious meal to be shared by family or friends. For dessert there is chocolate brownie with homemade red wine ice-cream, decorated with sesame and orange wafer. Sheer poetry!
It must be mentioned that lunch and dinner at Sa Tafona include wonderful homemade bread and probably the best aioli on the island. When it comes to wine, the lady of the house is an expert. Carina Rupp is a sommelieuse and recommends the ideal wine for each course. She’s established a successful collaboration with the adjacent organic vineyard Es Verger. The professional hotel manager took over the running of the small country hotel three years ago, after she had trained and worked in Switzerland – considered to be the world leader in the hospitality industry. Mallorca is now home, where
she’s successfully found a lifestyle where work and home-life fit together well.

opportunities: “manger en famille” – get-together to share dinner (as reviewed above) available on Thursday evenings, price: 25 € per person; garden picnic for a minimum of 2 people; “Wine & Dine” in collaboration with various Mallorcan wine producers. The Sunday lunch ‘Surprise’ menu (€22) is a great success: clients decide on fish or meat and what arrives on the plate is a delicious surprise. Furthermore, restaurant and guest rooms can be reserved for various events such as engagement parties, birthdays and conferences as well as baptisms and weddings – there’s even a private chapel within the estate, which is perfect for such events.
