About Baiben
Fernando Pérez Arellano – whose cuisine at Zaranda has earned the restaurant two Michelin stars – owns this waterfront restaurant, opened in 2016 in Mallorca’s Puerto Portals marina. Baiben combines a restaurant open every day for lunch and dinner, with a cocktail bar (which offers an all-day snack menu from noon).
The stylish airy restaurant has an attractive interior design and offers views over the luxurious boats moored right outside the premises.
Baiben restaurant offers an à la carte menu, a weekly changing weekday lunchtime menu, and an excellent-value ‘early bird’ three-course menu (including a glass of cava) from 18:30-20:30h. Vegans and vegetarians catered for.
The cuisine at Baiben
The restaurant menu offers classic Mediterranean cuisine with Latin and Asian influences, with grilled meat specialities including Black Angus and Iberian ‘Joselito’ pork.
Examples of dishes:
- Six Gillardeau oysters with three dressings
- Vegan mango and avocado ceviche
- ‘Parmigiana de Melanzane’ (Italian aubergine dish)
- Belgian-style ‘moules frites’ with curry flavour
- Roast Mediterranean sea bass with chermoulah (for two)
- Roast shoulder of lamb with Arabic spices, Lebanese dips, and pita bread
The chef
Although Fernando Pérez Arellano has created the culinary concept, the chef in charge of the day-to-day operation of Baiben’s kitchen is Frenchman Jerome Rohner, who leads a young and enthusiastic international brigade.
BrassBaiben bar
BrassBaiben is a joint project between Fernando Pérez Arellano and the master cocktail maker Rafa Martín – owner of the famous BrassClub in Palma. BrassBaiben’s heart is its impressive central bar, where mixologists create signature and classic cocktails.
Other cold and hot drinks are also served here, and an all-day menu of snacks (from 12h) is offered. As well as indoor seating, there’s a large al fresco terrace.
The location
Baiben occupies prime-location waterfront premises that were once home to the famous Tristán restaurant. It has the benefit of the nearby large car parking area at the control-tower end of the marina.
