The cosy restaurant Canela is owned by Mallorcan Fabian Fuster and his partner Irene Rigo.
The main area is styled like a Parisian bistro, at the back is a small Mediterranean-styled booth and the third small area has a view of the kitchen.
Fabián bases his cuisine on prime-quality produce to prepare his Med/Asian fusion cuisine.

How would you describe your cuisine (what style)?
‘Umami’: always looking for flavour and balance.
What are you hoping your clients feel when eating your food?
Happiness and surprise.
What do you think makes a restaurant successful?
Constancy and creativity.
What is your personal favourite dish to eat and which one to cook?
I don´t really have a favourite, my preferences depend on the moment and the time of the year. I love to cook marinated tuna-ventrasca with miso, orange, and ginger, prepared on a wood fire, accompanied by a salad with eggplant, zucchini, tomato – all fried, peeled, and seasoned with crushed almonds, garlic, basil, and oil.
On a night off, where is your favourite place on Mallorca to eat?
TripAdvisor: friend or foe, and why?
It´s a double-edged sword. To start with it might seem like a friend but then you realize that a lot of the comments are not valid. For the user it´s difficult to take advice from people who might have totally different criteria to their own. The concept could be improved a lot.
