Located in the glamorous Miami-meets-Mallorca Portals Hills Boutique Hotel, this fine-dining restaurant is open for dinner Wednesdays to Sundays and has the benefit of beautiful sea views from both its smart interior and the terrace.
White and gold are the colours in the spacious dining room, which has well-spaced tables and a semi-private dining area that can be curtained off for up to ten people. You could begin your meal with a glass of bubbles in La Cabana champagne lounge.
Executive chef Daniel Aranda is originally from Chile and studied at Incap Valparaiso, Chile’s finest university. He came to Europe to broaden his experience and knowledge, learning much about Mexican, Asian, and Italian cuisine while in charge of Mallorca’s largest catering firm. His most recent position was as sous chef at a renowned 5-star hotel on Ibiza.
The à la carte menu – although somewhat limited in the choice of main courses – offers some temptations and includes dishes made from Black Angus beef produced at Mallorca’s Son Mayol farm and fresh fish of the day.
The smartly dressed servers are as professional and attentive as they are good-looking. Collins Restaurant boasts the island’s largest wine wall, holding international and Spanish (including Mallorcan) wines to satisfy any oenophile. Secure valet parking is a bonus.
