It became a unique hotel situated in a superb tranquil position on the Bay of Palma. The restaurant has a magnificent high ceiling, and elegant heavy drapes that add to the luxurious feel.
In fine weather, you can dine on the terrace. La Fortaleza opens for dinner only and serves high-end Mediterranean-based cuisine, from famous chef Víctor García who uses organic and locally sourced ingredients. The service is excellent.
What are you hoping your clients feel when eating your food?
I want them to feel surprised when they taste recognizable flavours and feel entertained by a modern and sometimes amusing presentation.
What is your personal favourite dish to eat and which one to cook?
Pizza: I am a disaster in my private life, especially after trying the dishes in the restaurant every day. I love cooking stews and prepare dishes with a lot of care.
Which chef or experience (travels) had the most influence on your own cooking?
I think Ferran Adrià has been a before and after in Spanish gastronomy. We could also name Arzak, Quique Dacosta, Subijana and Martin Berasategui, as well as the Roca brothers.
How do you try to achieve work/life balance?
I try to turn off the mobile when I am with my family and take off days to spend with my wife and my son.
What are your thoughts about the restaurant scene on Mallorca?
With organizations like Chefs (in) (which I am part of) we try to make our gastronomy become more important. I believe that in the last five years it has changed drastically, in a positive way!
