About La Despensa del Barón
La Despensa del Barón is the restaurant found within the hotel Posada Terra Santa. The hotel, located in C/ Posada Terra Santa in the beating heart of Palma‘s ancient centre, was created to preserve the manor of the barons of Boixador, which dates back to 1576.
The interior of La Despensa del Barón has been carefully designed to preserve aspects of the building’s history: the contemporary dining tables are next to old stone walls and the mansion’s arches remain as a feature.
While being both vegetarian and vegan friendly, the specialities at La Despensa del Barón are meat and fish with a variety of flavours informed by chef Matías Provvidenti’s experience.
The menu ranges from Mediterranean classics like Caprese salad to a Thai-style salad as well as the more local anchovies on tomato tartar.
As is only right on an island, there are plenty of dishes with fish, with tuna tartar, prawns and octopus all featuring alongside Angus burgers and pork loins. The desserts are more traditional, going from red velvet cake to cheesecake and tiramisù.
Following dinner, and after having sampled the long selection of wines, La Despensa del Barón also offers a carefully selected choice of liqueurs and cocktails in the Salón Inglés.
La Despensa’s building has a long history, and so does its chef Matías Provvidenti.
Hailing from Argentina, Provvidenti has worked in Japan, the Philippines, and Barcelona under chef Adrian Geralnik, and his kitchen reflects this experience, offering a range of dishes from the local to Mediterranean, South American, and Asian using locally sourced ingredients.
He’s also aboard member of the Balearic Association of Kitchen Artisans (ASCAIB) and recently taught a masterclass at the Escuela de Hosteleria de las Islas Baleares (EHIB).
