About La Vieja de Jonay Hernandez
Opened in 2018, La Vieja a hip and colourful restaurant offering a menu of innovative and imaginative cooking based on the Canary Island roots of its head chef and owner Jonay Hernández.
The eatery is set in a bright and buzzing locale with a fun and friendly vibe, located in the trendy and regenerated Sa Gerreria neighbourhood on the edge of Palma’s old town.
The restaurant is open for lunch and dinner, and also offers a take-away service and group menu.
Innovative Canarian cooking
La Vieja was born from the pursuit of a dream that had been cooking on a slow flame for many years in the creative mind of Jonay Hernández. The cuisine is based on the reminiscences of his childhood growing up in Tenerife, with Canary Island cooking at its heart but reimagined with an avant-garde flair and passion for creativity.
Most of the menu is split into two parts, either bitesize dishes for one or sharing tapas for two. Canarian classics include wrinkly potatoes and ‘escaldón’, with many dishes including the islands’ famous ‘mojo’ sauce, while others fuse traditional cooking with flavours from Mallorcan cuisine. Balearic island produce also features heavily, with many of the ingredients locally and seasonally sourced. The inspiration from the chef’s family kitchen is emphasised with dishes such as My Father’s Lazy Potato Omelette and My Mother’s ‘Quesillo’.
The chef and owner
While born and raised on Tenerife, Jonay Hernández has been living on Mallorca for many years and has over twenty years’ restaurant experience. His first highly acclaimed restaurant was Flor de Sal, opened over ten years ago in Camp de Mar and offering a creative menu of contemporary Mediterranean fare.
He brings his passion and perfectionism to this new restaurant, which draws from the childhood nostalgia of his family kitchen as much as quality, locally sourced ingredients from Mallorca.
