About Mallorca Distillery
Mallorca Distillery is a small craft distillery located in Palma creating premium artisan spirits made exclusively from organic and foraged ingredients sourced around the island.
The company was founded by husband-and-wife team Byron and Amber, both from Newcastle, England, who work with master distiller James Gibbons who oversees each process in the production to ensure the highest quality with every distillation from a Spanish handcrafted copper still.
Local production and botanicals
Mallorca Distillery spent more than half a year perfecting their first release in 2018, Palma Gin, which has already earned itself positive reviews for its smoothness, delicate floral scent and combination of island botanicals.
Only local, natural and organic ingredients are used in its production, ranging from coriander seeds and cardamom pods to liquorice root and tomato stalks. Locally foraged botanicals also include wild lavender, almond blossom – collected once a year just before spring – and juniper berries foraged from specially authorised places in the island’s forests.
Even the mosaic patterns on the distinctive bottle were inspired by renowned Campos-based ceramics company, Huguet, and printed with organic paint. The company logo also takes inspiration from the west-facing rose window in La Seu cathedral.
Visit the distillery
Located in Palma’s Son Castelló neighbourhood, Mallorca Distillery is open to the public. Distillery tours include a brief history of gin, the processes behind making it, and of course tastings. Make-your-own-gin classes are also available, which involves producing and bottling your very own Mallorcan Gin to take home, plus you can book cocktail masterclasses and corporate events.
A limited edition oak-aged Winter Gin is also on offer, adding warming notes of cinnamon, and recently launched is their Palma Vodka which uses local Flor de Sal Salt to create the Vodka’s unique taste.
