The smart restaurant Markus Innobar took its name from talented young chef Markus Vinicios, the son of Emilio Castrejón – of Palma restaurant Emilio Innobar. Markus opened the restaurant but is now cooking alongside his father again in central Palma and chef Jennifer Flores has moved from Emilio Innobar to run the kitchen at Markus Innobar.

The lunch and dinner restaurant opened in spring 2016 and has an enviable location opposite Nassau Beach, boasting expansive views of the Bay of Palma. Only a short walk from the centre of the city towards Portixol, it has a smart ultra-modern décor incorporating lots of wood – in the floor, walls, pillars, ceiling – and plants. Different-sized windows are reminiscent of portholes and you look out to the glittering Mediterranean not far away on the other side. An exclusive private dining space is also available.
You can also eat al fresco on the front terrace, for those appealing sea views and the sound of the sea breeze rustling the palm trees.
Fans of Emilio Castrejón’s cuisine at Emilio Innobar are sure to enjoy the food here – it’s virtually the same fusion of Asian and Mediterranean, and chef Jennifer Flores’s interpretation of contemporary Mediterranean dishes. It’s all based on high-quality fresh produce. As at Emilio Innobar, a board lists dishes for sharing; these include gyosas, tartar, sashimi, sushi (lunchtime only), and ceviche. At night you could indulge in the set tasting menu.
We began our tasting lunch menu with a selection of perfectly cut mixed sashimi of tuna, salmon, seabass and gallo (St. Peter’s fish). This was followed by another popular starter dish ‘ceviche de langoustines’ which is great to share. The cooked prawns are served warm with avocado and tomato and a portion of fried banana slices on the side. We were encouraged to try the ‘bogavante’ and were not disappointed with the succulent lobster in a tasty red sauce. The meat dish was the Solomillo with rucola and parmesan cheese and again think of sharing this as it is a big portion for one.
For desert we had the famous Austrian sweet soufflé known as ‘Salzburger nockerl’ (offered also at Emilio Innobar who has many loyal German clients), which requires a preparation time of 20 – 30 minutes, so order in advance as it is simply divine!
Markus Innobar offers an international wine list, including Mallorcan labels. Or you can slake a thirst with an ice-cold Brabante beer on tap.
Service here is professional and friendly and the team’s respect for the impressively mentored Markus shines through.
