This hospitable Selva restaurant serves Mallorcan food in a traditional 19th century village house owned by the mother of chef Marga Coll.
The gleaming kitchen in the modern main dining room is open. The charming partly covered terrace offers extensive views.
Marga bases each day’s delicious dishes on her early morning market shopping nearby.
This means that there is no actual à-la-carte menu but you can choose individual plates from one of two tasting menus if you don´t feel like a whole menu. It is advisable to call and make a reservation as opening times change several times during the year.
How would you describe your cuisine (what style)?
It´s a cuisine based on fresh and seasonal products and its roots are in the traditional Mallorcan cuisine.
What are you hoping your clients feel when eating your food?
Happiness – enjoying the food, the ambience and the environment.
What do you think makes a restaurant successful?
Honesty, dedication, and doing everything as if it were for me personally.
On a night off, where is your favourite place on Mallorca to eat?
That´s a difficult one but I would probably go to El Jardín.
How do you try to achieve work/life balance?
You can achieve a balance even when you cannot really distinguish clearly between one and the other. When your work is your passion, they naturally mix.
What do you think the next big culinary trend is likely to be?
It´s complicated. I can see two tendencies which may seem opposing. One is ‘crossbreeding’, a mixture of cultures and gastronomies (Asian, American…), and the other is the trend of valuing local products and gastronomy. Maybe these don´t have to be opposing, but complementary.
