Quadrat – the restaurant of Palma’s 5-star Sant Francesc Hotel Singular – now has a new executive chef at the helm.
Alfonso Lillo has moved to Mallorca from Restaurante Terre in Alicante, where he had been head chef since it opened.
The 36-year-old Spaniard brings a wealth of interesting and varied experience to his new role. Prior to working in Alicante, he was head chef to the Qatari royal family at the Al Wajbah Palace and, before that, held executive chef positions in London at The Cavendish and The Fat of the Land.
His earlier career included working in the UK at Gordon Ramsay’s Michelin-star Maze restaurant and Heston Blumenthal’s The Fat Duck as ‘chef de partie’, and at restaurants on the Spanish peninsula.
Alfonso holds several impressive qualifications in the field of gastronomy, culinary arts, advanced food science, and hospitality management. He has built himself a good reputation for regional Catalan and Mediterranean cuisine.
The new executive chef appointment comes at an exciting time for the 42-room Sant Francesc Hotel Singular. The boutique hotel was recently voted one of the ’50 Best Hotels in the World’ and the ‘Top Hotel in Spain and Portugal‘ in the 2016 Condé Nast Traveler’s Readers’ Choice Awards. These awards are the longest-running and most prestigious recognition of excellence in the travel industry.
