Located in the former Son Orlandis ‘tafona’ (olive press) between Andratx and Port d’Andratx, Oliu is owned by the talented young Mallorcan chef Joan Porcel Balaguer.
The restaurant has a smart contemporary interior and an open kitchen, where you can see Joan and his team at work. What do you think makes a restaurant successful?
Constancy, dedication, and endurance. Continuous renovation in line with current times and, first of all, humility.
What is your personal favourite dish to eat?
I am a big fan of Asian cuisine, and particularly when it´s fused with produce from our own island.
Which chef or experience had the most influence on your own cooking?
I was lucky enough to meet lots of famous chefs, even with Michelin stars, and also worked with some of them – in the States and in other places in Spain. From here, I have always liked Martín Berasategui for preserving the essence of the dishes, as far as flavours are concerned, and for innovating the presentation constantly.
How do you try to achieve work/life balance?
I do CrossFit, where I can disconnect from everything. It energizes me so that I can come back to work recharged.
What are your thoughts about the restaurant scene on Mallorca?
Without a doubt it´s getting better every day: the offer is extraordinary and we can see that year after year more and more restaurants on the island receive awards. The gastronomic diversity can satisfy all types of palates and customers.
