In the heart of the charming village of Puigpunyent lies restaurant Oleum at the Gran Hotel Son Net overlooking views of the Serra de Tramuntana mountains. A few steps inside and pure Mallorcan elegance surrounds us. Chef Sergio Olmedo and his team have curated an experience that offers delicious Mediterranean cuisine in a timeless setting.
We walk through to find iron chandeliers, exposed stone and candlelit tables where waiting staff are ready to present an evening of first-class dining.
We start with a beautifully-presented array of aperitifs where on slices of crisp pastry come toppings of guacamole, beef tartar and guacamole.
These are the perfect size to give you a taste of what is to come without spoiling your appetite.
Our starters are a sweet cherry gazpacho with smoked cheese, marinated sardine and pistachios. Encircled by a ring of flowers, the gazpacho is elegantly poured into the centre which is smooth, silky and packed full of flavour. It is paired with a crisp verdejo which compliments its underlying smoky tones and crunch of pistachios. The second starter of chargrilled duck foie gras comes next and is given a pouring of pear and rice broth topped with sea lettuce.
In between courses we can’t help but admire the lush landscape views that surround us. Restaurant Oleum is blessed with sloping high mountains and deep valleys that all contribute to the its unspoiled ambience. The restaurant’s ivy-covered walls and stone patio perfectly align with the scenery, making it quite the romantic spot for a special occasion or anniversary.
Our mains arrive and Chef Olmedo continues to impress with his flair for presentation – all the dishes placed are exquisitely arranged. The sea bass with sautéed squid, smoked corn puree, vegetables and chive emulsion is a dream, as is the loin of lamb with spicy pumpkin and mushrooms. The dishes have a good base of traditional flavours but it is the little twists and innovative compositions that make Chef’s Olmedo’s work really stand out.
We finish with a deconstructed cheesecake which arrives in re-imagined form. Its main body is a wave of soft light mouse sprinkled with toasted crumbs and jagged pieces of sweet meringue. Its summer berries hold a wonderful sweetness which can only be achieved from a fresh Mallorcan harvest.
