Lloseta – not one of Mallorca’s best-known villages – may seem an unlikely place to find a restaurant that´s so good you have to book months ahead.
Restaurante Santi Taura
English, Spanish, German
Santi Taura is an artisan chef and one of several innovative young Mallorcan chefs who have turned the island’s traditional cuisine into something exciting, modern and sophisticated. For lunch and dinner, Santi offers a weekly-changing tasting menu with an excellent price-performance ratio. The affable chef comes to greet diners and explain the menu at each table.
What do you think the next big culinary trend is likely to be?
It´s already here: local products, proximity, revealing the chef’s personality and with some stories behind the cuisine…
TripAdvisor: friend or foe, and why?
In TripAdvisor you can find what you are looking for – both bad and good criticism; there are as many opinions as clients and the anonymity of TripAdvisor allows you to write about a restaurant without even having been. It´s been years since I looked at it; I don´t know if that’s wrong or right but I appreciate the people who talk to me face to face – with good or bad comments. Those clients are the ones who want to come back and those are the ones we should work for.
How do you try to achieve work/life balance?
We try to work for a living and not to live for work – you have to know how to say NO.
What are your thoughts about the restaurant scene on Mallorca?
It´s getting better and better; we Mallorcan chefs are moving forward, learning, and we take more risks than before. Additionally, the chefs the island has ‘adopted’ are contributing to our gastronomy’s value. Without them the progress in quality on Mallorca wouldn’t be understandable.
