German chef Gerhard Schwaiger has always been associated with haute cuisine.
In 2015 Schwaiger left Tristán in Puerto Portals to open up his own restaurant in Palma. Schwaiger Xino’s is located in the Son Moix building. The style of the eatery is fresh, light and contemporary and the Mediterranean cuisine with international touches is based on local produce. Schwaiger reinvented some his classics and introduced exciting new dishes to his repertoire.
The service is very professional and in the summer you can eat on the terrace, which affords views of the Tramuntana mountains. And the home of Real Mallorca.
How would you describe your cuisine (what style)?
It´s a signature cuisine, classical and international.
What do you think makes a restaurant successful?
The staff front of house – people are the key.
What is your personal favourite dish to eat and which one to cook?
‘Cocidos’, stews, and fish.
Which chef or experience (travels) had the most influence on your own cooking?
Heinz Winkler and Rudolf Katzenberger.
TripAdvisor: friend or foe, and why?
It´s something we are not too interested in. In my opinion it´s not really valid or at least not all the critiques are.
How do you try to achieve work/life balance?
At the moment I don´t really have a private life, it´s all mixed up with our new project.
What do you think the next big culinary trend is likely to be?
High-level fast food and restaurants that are very personalized, or with a marked character.
What are your thoughts about the restaurant scene on Mallorca?
There´s almost too much of an offer of restaurants and many of them are really good. It´s a good moment for Mallorcan gastronomy.
