Irene Gutiérrez, the owner of Sumaq, comes from Cuzco and opened her Peruvian fusion restaurant in Santa Catalina in 2013.

Sumaq is a Quechuan word meaning delicious or tasty; the name couldn’t be more appropriate for this restaurant serving lunch and dinner, year-round.
Irene prepares creative dishes with authentic ingredients from Peru, Japan, and China. Her vibrantly colourful fusion cuisine tastes healthy, fresh, and delicious.
It also looks good on the plate and the chef will adapt dishes to suit vegetarians, vegans, etc.
If you can’t join the gastronomic tourists in Peru, head to Sumaq. No packing required.
What are you hoping your clients feel when eating your food?
Joy, surprise, and happiness.
What do you think makes a restaurant successful?
Mainly a cuisine which surprises and is well presented, and also a good service.
What is your personal favourite dish to eat and which one to cook?
I am passionate about anything in the kitchen. If I have to choose a dish, it´s spicy soups in the winter that I have a weakness for.
Which chef or experience (travels) had the most influence on your own cooking?
My roots are my major influence.
On a night off, where is your favourite place on Mallorca to eat?
Ufff! There are so many: from a sunset at the Jumeirah hotel to sushi in Arume, tapas in Gaudeix, a special night in Zaranda, or a visit to Santi Taura … and the list is much longer. Mallorca has a high standard.
TripAdvisor: friend or foe, and why?
Friend – because the comments help you to improve; people are very honest behind their computers. I don´t like the comments from the ‘haters’, we all make mistakes sometimes and when someone gets angry they tend to blow the criticism out of proportion.
