This pop-up restaurant in Palma has now closed. The owners will be opening a new permanent restaurant in Mallorca’s capital later this year.
Palma’s increasing appeal as a foodie destination owes this fact to many different splendid eateries in the capital of Mallorca. In 2016, The Lab opened in a pop-up location to critical acclaim: diners were treated to a dining experience that surprised and delighted with each plate placed before them.

2017 promises to be even more exciting for The Lab: new at the helm in the kitchen is Austrian executive chef Simon Petutschnig – who trained in several Michelin-starred restaurants in Barcelona and has already made a name for himself on Mallorca. Under Simon, The Lab will offer a different culinary theme each month – reflected in both lunch and dinner menus. For March, the cuisine is Japanese; April, authentic Mexican (not Tex-Mex), and May, Italian.
Fine food and art being inextricably linked, The Lab has introduced a new concept to excite aesthetes: it also becomes a gallery, with a display of art themed to each culinary concept. In partnership with Palma gallery ABA ART LAB, as curator, The Lab will exhibit works in an innovative new art-and-food-linked experience from April 1st to the end of May.
Aranka Israni (from New York) and the Mallorcan artists Joan Costa, Estefanía Pomar, and Toni Garau will all have their work on display at The Lab this spring. Every 14 days a new exhibition will be inaugurated with a special dinner (including cava and wine) comprising dishes created to match each artist’s vision and sensibility.
Dinner at The Lab remains an exciting gastronomic experience of innovative dishes that exceed one’s expectations in terms of flavour, texture, and presentation. But The Lab also offers a highly accessible option for lunch in Palma, with a short menu of dishes based on the month’s culinary theme, at prices that mean almost anyone can enjoy an affordable gastronomic and art experience.
There’s more exciting news: this spring The Lab will open in a retail concept opposite The Lab Restaurant, offering ready-made sous-vide dishes to serve in your own home and gluten-free ice cream. The Lab pop-up will move to an exciting new Palma location in early summer.
