Zaranda – at the 5-star hotel Castell Son Claret in Mallorca’s southwest – is the Balearics’ only restaurant with two Michelin stars. With an elegant dining room and al fresco seating in the hotel’s central courtyard, it is renowned for the innovative cuisine of chef Fernando Pérez Arellano.
Arellano originally opened Zaranda in 2005 in his home city Madrid, gaining the first Michelin star the following year.
The restaurant eventually moved to Mallorca, and has retained the star annually since it was first awarded. Michelin awarded Zaranda two stars for 2016 and 2017. This restaurant also holds two Repsol Sols.
As well as supporting local food producers, Arellano commissions Mallorcan artisans to make unique tableware complementing his culinary creations.
Restaurant Zaranda offers an exceptional wine list of international labels; the optional sommelier’s wine pairing is available for each tasting menu.
This is a seasonal restaurant, open only for dinner from Tuesday to Saturday. Its manager is Itziar Rodríguez.
Arellano uses a variety of produce from the hotel’s grounds, as well as ingredients he sources elsewhere on Mallorca and fresh seafood from the Balearic Sea. Zaranda offers three tasting menus, which offer the briefest of dish descriptions – guaranteeing that each dish will surprise on arrival.

- Suckling pig “cochifrito” – east meets west

- Burrata Zaranda – creamed goat’s cheese, strawberries and basil coulis
About the chef
Fernando Pérez Arellano gained his early experience in the kitchens of some famous restaurants, including Patrick Guilbaud (Dublin), Le Gavroche (London), Don Alfonso 1890 (Naples), Maison Pic (Valence), and Can Fabes (Barcelona). He opened his own restaurant Zaranda in Madrid at the age of 27, to great acclaim.
Arellano has been an invited guest chef in countries including Croatia, Colombia, and the Dominican Republic.
